Meet the people behind Ripe Cider

We, Georgie and Cameron, make full juice, natural cider in Cornwall, following the same principles as natural wine. It's 100% apples, naturally occurring wild yeast, hand-picked, hand washed and fermented in ex-wine oak barrels.

In contrast, in the UK, cider legally only needs to contain 35% apples. The other 65% can be just sugar and water with added sulphites and sometimes sweeteners.

However, when made from 100% apples, with wild yeast and no added sulphites, cider can be a delicious, interesting, complex drink. It can express terroir just like a wine and be a much better choice not only for our own health but also for the health of the environment.

Long before craft beer became fashionable, cider was Britain’s drink of the orchard.

Made from carefully selected apples and fermented with patience rather than shortcuts, great cider reflects the landscape it comes from. Every county has its own traditions, from the bittersweet apples of Somerset to the crisp orchards of Herefordshire and beyond.

At The Local, we seek out independent cider makers who prioritise flavour over volume. The result is cider with real character—dry, refreshing and naturally expressive of the fruit and place that created it.
