The Local’s perspective

Farm-made ice cream from Westcombe, Somerset

Milk from the family herd, ricotta from Westcombe Dairy and mint from the farm’s walled garden: Iona and Rob Gore’s ice cream gives familiar ingredients another place at the table.

The story

A different route for the milk

At Westcombe, the dairy connection is close to the product. Iona and Rob describe making Brickell’s ice cream on their Somerset family farm, using milk from its herd. In a tub of Ricotta Stracciatella, that connection continues through ricotta made at Westcombe Dairy. For Mint Choc Chip, it reaches into the farm’s walled garden.

These are specific connections, rather than a claim that every ingredient comes from the farm. They give each flavour a starting point and the wider range a sense of place.

The people

Two roles in the same business

Rob leads manufacturing. Iona looks after sales, marketing and finance. Between them, the work runs from making the ice cream to bringing it to customers—a useful reminder that a small food business needs more than a good recipe.

Inside the making

What goes into the tub

Brickell’s describes its approach as traditional French custard-style ice cream. Alongside the farm’s milk, the makers name cream from Chew Valley, egg yolks from Clarence Court and chocolate from Pump Street among their ingredients. They also describe using British beet sugar.

The distinction matters: those are named suppliers and ingredients, not a claim that the farm grows or produces everything itself. Core flavours sit alongside seasonal batches, so the current selection is best checked with Brickell’s directly.

A flavour to begin with

Ricotta Stracciatella brings Westcombe Dairy’s ricotta into the ice cream itself. Mint Choc Chip offers a different connection to the farm, through the garden-grown mint Iona and Rob describe using.

THE LOCAL EDITORIAL

Why we love Brickell’s Ice Cream

Iona and Rob are good friends of ours, so this is a personal recommendation. We love what they make.

I still remember trying an early version of their mint ice cream. Iona had picked the mint from their garden. To me, it’s the best mint ice cream there is, and it’s become a firm family favourite. The Ricotta Stracciatella is another.

It’s lovely to go out for a meal in Bath or Somerset and spot Brickell’s on the menu. There are our friends’ ice creams, being served in some of the restaurants and pubs we love.

And don’t overlook the Christmas range. If you’re spending Christmas with family, this would be high on our list of gifts for whoever’s hosting.
